I am a member of an online food intolerance and food allergy support group…and more often than not, I am really deeply concerned that those of us with food intolerances are not getting the nutrition nor caloric intake we need to thrive. So here is a dessert that is not only keto-diet friendly and celiac-safe, it’s amazing for good hormone synthesis (and fertility, which is a key indicator of health whether or not you care about being fertile.)
No need for a food processor. You can make it with me or scroll below for the recipe:
Key Lime Pie 60 Second Fix (makes two servings)
1 ripe avocado
1-2 TBSP pure maple syrup (none of that corn-syrup junk please)
1 TBSP lime juice
1 1/2 TBSP unsweetened coconut flakes (or you could use GF graham crackers if you have them).
1. Cut the avocado (slice it in half, going all around from the stem to the roundest part and back up, then carefully stab the seed, and pry it out to discard…or plant).
2. Remove the avocado meat from the shell and mash up with a spoon or fork.
3. Stir in lime juice, coconut flakes, and maple syrup.
4. Eat half… if you can resist the other serving size. I usually eat it all at once.
